Coconut oil, or copra oil, is an edible oil extracted from the meat of mature coconuts from the coconut palm (Cocos nucifera). It has a high saturated fat content, making it slow to oxidize and allowing it to last up to six months at 24 °C (75 °F) without spoiling.
Virgin coconut oil is produced from fresh coconuts, not dried copra. There are three main methods to make virgin coconut oil: quick drying fresh coconut meat and then pressing out the oil; wet-milling, where oil is extracted from coconut milk and separated from water by boiling, fermentation, refrigeration, enzymes, or centrifuge; and wet-milling with direct micro expelling, where oil is extracted from fresh coconut meat after adjusting its water content and pressing it.
