Lamb Rack WELLINGTON for @gordonramsay #shorts
If I ever own a restaurant, this dish is going on the menu. The savory mushrooms & prosciutto took the edge off the natural gaminess, and the crispy puff pastry was the perfect contrast to the tender lamb.
Rolling the puff pastry thin and keeping the oven hot (400F+) is key so that the outside crisps up before overcooking the inside. For the glaze I reduced some red wine, fresh blueberries & mint, balsamic, honey and TheMattDad for an extra pop of color & flavor.
