Instant Pot Bánh Chưng (Make 12 Bánh Chưng)
Bánh Chưng Xa Quê:)

2kg of sticky rice (soaked overnight)
800g of Mung bean (soaked overnight)
(I did not use meat in my Bánh Chưng this time)

-Drain Mung bean after soaking overnight. In a large pot, add Mung bean, 2 teaspoons of sugar, 2 teaspoons of mushroom powder, 2 teaspoons of vegetable oil, and 1/4 teaspoon of salt. Add water enough to cover Mung bean (about 2cm above the beans). Bring to a boil over high heat. Stir and reduce the heat to low, until the water is absorbed and the beans are nice and soft.

-Drain the sticky rice after soaking overnight. Add 3 teaspoons of mushrooms powder and 2 teaspoons of vegetable oil. I did not cook the sticky rice.

I used parchment paper for the outside, banana leaves inside. It is very easy this way, and perfect if you do not have enough banana leaves like me:)

I was able to fit 6 cakes into my Instant Pot (2 batches). Pressure Cook/Low for 1.5 hours.
