UFC fighter Johny Hendricks was forced to withdraw himself from UFC 192 because he eats meat. His body wasn't healthy enough to complete the weigh in process, and he was sent to the emergency room for an intestinal blockage, and kidney stones.
Athletes common dehydrate themselves to lose up to 30 pounds of water weight the day before a fight, and then rehydrate to gain a weight advantage against their opponent. It's a very unhealthy practice, especially for those with diets high in animal protein, because their kidneys are already weakened and the dehydration process puts further stress on them.
Vegan diets are great for the kidneys, especially high carb low fat vegan diets. Hopefully this process of extreme dehydration will end soon, as more and more athletes get injured during this process.
