how to make a falafel burger at home

Topped with homemade vegan tzatziki sauce, this falafel burger is a simple and savory vegan dinner idea, perfect for weeknight meals.

Ingredients
1 and 1/2 cups of cooked/soaked dry chickpeas
1/4 cup of flax seed meal
1 tbsp of potato starch
1 tbsp of nutritional yeast
2 tbsp of sliced red onion
1 cup of fresh parsley, loosely packed
1 tsp of onion powder
1 tsp of paprika
1/4 tsp of cumin
1/2 cup of sunflower oil
1 lemon
4 whole wheat buns
1 beefsteak tomato
4 butter lettuce leaves
Homemade Vegan Tzatziki Sauce
1 cup of vegan yogurt
1/4 cup of finely grated cucumber
1 tbsp of sunflower oil
2 tbsp of fresh dill
1/2 lemon

Directions
1. In a blender, combine chickpeas, flax seed meal, potato starch, red onion, nutritional yeast, parsley, onion powder, paprika, cumin, sunflower oil, and juice of 1 lemon. Blend until smooth.

2. Add falafel mixture to a bowl and refrigerate for 10 minutes.

3. Heat a large frying pan to medium heat and drizzle with oil. Form 4 patties from mixture and add to pan. Cook for approximately 5 minutes per side, or until each side is golden brown. Remove from heat and let cool.

4. To make tzatziki sauce, add vegan yogurt, finely grated cucumber, sunflower oil, fresh dill and juice of 1/2 a lemon to bowl and mix well. Set aside.

5. When ready to serve, top falafel with tomato slices, lettuce and tzatziki sauce. Serve and enjoy!
