This wild blueberry pie is vegan, gluten free, and DELICIOUS!
Here is the full recipe:
Crust:
Wet Ingredients:
- 3 Tbsp of Flax
- 1/3 Cup of Applesauce
- 1/2 Cup of Coconut Sugar
- 1/3 Cup of Melted Coconut Oil
- Combine in bowl and mix well
Dry Ingredients:
- 1 1/2 Cups of Oat Flour
- 1/2 Cup of Brown Rice Flour
- 3 Tbsp of Tapioca Flour (Aka Tapioca Starch)
- Mix well and add dry to wet ingredients
Crumble:
- 2/3 Cup of Oat Flour
- 4 Tbsp of Brown Rice Flour
- 2 Tbsp of Coconut Sugar
- Combine and Mix
- Add 4 Tbsp of Melted Coconut Oil
Filling:
- 6 Cups of Frozen Blueberries
- 2/3 Cup of Maple Syrup
- 1/3 Cup of Tapioca Flour
- 2 Tbsp of Lemon Juice
- Heat in Saucepan on medium heat until thick
- Transfer to Crust
- Add Crumble to top
Bake @ 350 for 30 Minutes
