Cowboy Casserole – One Pot Meal – Skillet, Crockpot, Instant Pot or Oven – The Hillbilly Kitchen
Cowboy Casserole is a Hamburger Casserole that combines basic foods to create an irresistible meal. Beef, beans, potatoes, and tomatoes are the foods that build America. This combination is well over a 100 year old recipe.
Cowboy Casserole is an easy to whip up, simple, one pot dish that is perfect for any weeknight dinner, lazy weekend, camping even potlucks. It can be cooked in a skillet on the stove top fast, in an instant pot, in a crockpot or in the oven. The variations are virtually endless.
Cowboy casserole is easy a, affordable and delicious. You can make it with the ingredients that you already have on hand. No need for a shopping trip in a specialty food store. This is the kind of meal that I grew up on, and I raised my 4 kids on.

Ingredients:
1 lb. Ground Beef
1 cup Chopped Onions
4 to 6 cups Chunked Potatoes
1 to 2 cans Kidney Beans (or Pinto, Northern, …)
1 can Diced Tomatoes or Fresh Tomatoes
Salt & pepper to taste
Minced Garlic to taste
4 ounces Cheddar Cheese (or any cheese that you prefer)
**Optional - 1 cup of chopped green bell peppers
- Hot Peppers
- Hot Sause
- Chili Powder
- Taco Seasoning
