Phyllo Crinkle Dessert with Rose Infused Pudding
12 phyllo sheets /baklava pastries
3 tablespoons butter, melted
1 heaped tablespoon sugar
For pudding;
450 ml milk, little less than 2 cups
1 handful dried roses
2 tablespoon flour
140 g sugar, 4,9 oz, 3/5 cup
2 egg yolks
1 tablespoon butter
For topping;
1 handful raw pistachio kernels (boziç), chunked
1 handful dry rose petals
• Brush phyllo sheet. Sprinkle a pinch of sugar, crinkle and place on buttered baking tray. Do the same for all the phyllo sheets. Bake for 8 minutes at the base of the oven, then bake 10 minutes more on the middle rack, in preheated 200°C (390°F) degrees upside down oven mod.
• To prepare the pudding, pour milk in a saucepan and add dried roses. Bring it to boil and let it to cool down so that the aroma of roses infuses in the milk well.
• Add flour and granulated sugar to another saucepan, warm a little. Pour the cooled and strained rosy milk. Mix.
• Cook this mixture by stirring constantly. When it starts to thicken, pour some on the egg yolks to equalize the temperatures. Then pour all the mixture into the sauce pan again and cook a little more.
• When the pudding is thick, add butter, mix, and turn off the heat. If you want more intense rose aroma, add 1 or 2 tablespoons of rose water at this stage.
• Pour the cooled pudding over the crunchy phyllo and bake 10 more minutes in the middle rack of oven.
• Add raw pistachio kernels, some rose petals on the crispy dessert you have taken out of the oven and serve. Adding a pinch of black pepper would give this dessert a cool edge.

You can also make this recipe with some savory ingredients like bechamel, sausage, minced meat, cheese, chorizo, etc. Don’t forget to take out the sugar while you butter the phyllos if you’ll make in that way.
