STREET CORN
Corn on the Cob – 4 Pack
½ Cup Mayonnaise
¼ Cup Mexican Crema (Sour cream is ok, but Mexican Crema makes better Mexican street corn 😉)
Juice of 1 large Lime (2 Tablespoons)
3 Tablespoons Melted Unsalted Butter (45 grams)
1 Tablespoon TAJIN (you’ll need more to sprinkle at the end, the more the MEJOR)
1 4oz Queso Fresco (Crumbled) for garnish
CORN
Boil in a large saucepan with pinch of salt for 5-7 minutes. White corn takes longer to cook like 20 min. You can roast or grill your corn, just make sure that if fully cooked. You can even use corn kernels
SAUCE
Place all ingredients in a bowl and mix until well incorporated, remember to keep at room temperature as it may become hard because of the butter.
Spread freely on corn and finish with crumbled Queso Fresco and Tajin.
