CHARRO BEANS AND RICE
1-2 lbs pinto beans
1 can of rotel
1 onion chopped
32 oz broth (any kind)
1 onion soup mix
jalapeños are optional.
-rinse the beans in a strainer and pour into the crockpot with the broth, onion, rotel, onion soup mix and jalapeños. fill to the top with water and cook on low for 8 hours. add any additional seaonings. *optional* cook 1 lb rice and cornbread mix separately. pour beans over a bed of rice, top with cheese and a side of cornbread.
LOADED BAKED POTATOES
6-8 russet potatoes
foil
cheese
sour cream
green onions
bacon bits
-wash and dry the potatoes. poke holes in them and wrap them in one layer of foil. repeat for each potato and place in the crockpot to cook on low for 8 hours or high for 4. when done, take out of the foil and cut in half. top with your favorite potato toppings and enjoy.
SAUSAGE MIX
1 lb sausage link, sliced
2-3 russet potatoes, chopped
1-2 yellow squash, chopped
1 bag of frozen green beans (2-3 cups worth)
-add a layer of foil to the bottom of the crockpot. first add the potatoes(pour a little water over them). then, add the rest of the ingredients and cook on low for 6-8 hours. when done, top with cheese and wahlaaa!
COWBOY SUPPER
1 lb ground beef
1-2 cans of chili beans
1 can of corn(dont drain)
1 onion chopped
2-3 russet potatoes chopped
1 can of rotel
-cook the ground beef in the skillet until no longer pink. add in the rotel, corn, chili beans, onion and potatoes into the crockpot and give it a nice stir. pour a cup or two into the crockpot for the potatoes but not too much. we don't want this to be "soupy". add your favorite seasoning and cook on low for 6-8 hours for the potatoes to cook. top with cheese and enjoy! *optional* when done cooking, in a separate bowl mix together cornbread ingredients per instructions on the box. pour the mixture over the crockpot meal evenly. take the pot out of the crockpot and cook in the oven until cornbread is cooked all the way through and enjoy!
