The story behind the recipe.
This is one of my mother's favourite recipes. She believes that no food should be wasted and we are expected to utilize the breadfruits that fall from the tree. She often stored the ripe breadfruit puree in the freezer for later use. If you do not have a tree in your backyard then you can purchase one at the market and allow it to ripen. The "fitter" the breadfruit the better the flavour of the ripe breadfruit.
Ingredients
2 cups flour
3 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon powder
1/2 cup margarine
1 1/4 cups sugar
3 eggs
2 cups breadfruit puree
1 cup raisins
You will need an 8" baking tin
Bake on a stovetop for 1 1/4 hours or until done
You can bake in an oven at 350 degrees Fahrenheit
