Granny’s Pistachio Salad
1 -20 oz can crushed pineapple (drained)
1 - 3.4 oz package instant pistachio pudding mix
8 ounce container Cool Whip (thawed)
½ (10 oz ) package of miniature marshmallows
¾ - 1 cup of chopped nuts (optional)- reserving a small amount for topping/garnish
Maraschino cherries for top (optional)
In a large mixing bowl, add drained pineapple and pistachio pudding mix. Using a spatula, mix well to combine. Gently fold in the thawed Cool Whip into the pudding mix. Once all ingredients are combined, add mini marshmallows and nuts (optional) fold to incorporate throughout the salad. Top with maraschino cherries and nuts. Refrigerate before serving. The salad will last for 3-4 days covered in the refrigerator. Enjoy!
