If you're not eating your Pad Thai with Nam Pla, you're eating it wrong. What is nam pla? Its a delightfully stinky condiment made of fish sauce, fresh Thai chilis, sometimes lime and sometimes garlic. The recipe varies, but what doesn't vary is how it transforms pad/phad Thai from a sweet noodle dish to one that sings from the treetops, seriously. You need to try this the next time you go out for Thai food or hit up your favorite food cart for some street food. I also head out to my brothers to pick elderberries, steal some wine and spend the afternoon on the porch stemming berries with the chickens.
