Karin is the author of the book "Elegant Pie" and has over 100,000 followers on Instagram. Her pies are works of art, but she does not keep her methods secret. In this video she shows how to decorate any pie with a dahlia-like decoration.
The pie has a top crust that is coloured with freeze-dried blueberry powder, but you can use any contrasting coloured dough such as chocolate or raspberry. The recipe for the white dough and the blueberry dough are shown below and can be found, along with many other tips and examples on www.elegant-pie.com. Flaky all-butter White Pie dough
2 ½ cups (350g) all-purpose flour
1 tsp salt
1 tsp white sugar
200g (1 cup or 2 sticks) cold butter
1 med. egg + about 5Tbl ( 80 ml) ice-cold water (carbonated mineral water if available – alternative: Non-carbonated water and ¼ tsp cream of tartar) + a few drops of vinegar. (The total amount of liquid should be 110 – 115 ml or a little less than 1/2 cup)
Place flour, salt and sugar in the food processor bowl and process at high speed to mix.
Cut butter into strips then into about ½ inch (1 cm) cubes.
Add butter to flour mix and pulse at low speed until the butter is in pea-sized discrete pieces. This only takes a few short pulses. Better too little than too much pulsing.
Beat egg lightly and mix with cold water and vinegar. Stir in cream of tartar if using.
Turn on processor to medium speed and immediately add egg-water mixture and shut off motor. Pinch the dough between your fingers and if it is too dry add a bit more water and pulse. If too sticky add a little flour. When you have done this a few times you will know how long to mix. The process goes very quickly. Do not over mix.
Makes about 700g (23 oz). Divide in half, wrap in cling film and refrigerate for at least an hour, up to 18 hours in refrigerator, or freeze to keep for at least 2 weeks.
Purple or blue dough – Simply dissolve 2-3 tablespoons (20-30 grams) freeze-dried blueberry powder (available on-line) in the water and prepare the dough as in the basic Pie Dough recipe above. If you prefer a less uniform color or want a marbled effect you can mix the berry powder with the flour and then prepare the dough, mixing as much as necessary to obtain the desired effect. Note that the depth of color will depend upon the amount of blueberry powder you use. The more powder added the deeper and richer the color will be. This way the color can be varied from a light, sky blue to a very deep purple. To obtain an even darker color you can replace the water with blueberry juice. Freeze-dried powders made from raspberries and blackberries are also available and give pink to reddish variations. The various powders can also be combined to provide various hues and shades.
