Ingredients:
2-3 summer squash
2-3 zucchini
2 tbsp olive oil
2 tsp kosher salt
1 tsp garlic powder
¾ tsp onion powder
1 tsp black pepper
1 tsp crushed red pepper flakes
1 small yellow onion, chopped
¼ - ½ cup parmesan cheese, grated
Instructions:
Preheat oven to 450 degrees Fahrenheit.
Cut the summer squash and zucchini into small chunks.
In a mixing bowl, combine the olive oil, kosher salt, garlic powder, onion powder, black pepper, crushed red pepper flakes, and chopped onion.
Add the summer squash and zucchini to the bowl and toss to coat the vegetables with the seasoning mixture.
Spread the seasoned vegetables out on a baking sheet and roast in the preheated oven for 20 minutes.
After 20 minutes, remove the baking sheet from the oven and sprinkle the grated parmesan cheese over the roasted vegetables.
Return the baking sheet to the oven and roast for an additional 5 minutes or until the cheese is melted and golden brown.
Remove from the oven and serve hot.
