3 large eggs (50 g each w/o shell)
¼ tsp kosher salt (Diamond Crystal; use half for table salt) (divided, for the eggs and tomatoes)
⅛ tsp white pepper powder (divided, for the eggs and tomatoes)
2 tomatoes (10 oz, 290 g for 2 servings)
2 Tbsp neutral-flavored oil (vegetable, rice bran, canola, etc.) (for cooking the eggs)
