You gotta be a little crazy to make wine on the side of a volcano, but that’s precisely what the plucky Salvo Foti has done with i Custodi, a winemaking project highlighting the very best of what Mt. Etna has to offer.
This wine leads with a strong note of fresh cedar woodsmoke and pumice, but underneath that lies fresh forest berries, figs, and sugared dates. It’s an evocative wine that takes you straight to the rocky, windswept crags of Etna, a plume of smoke rising in the distance. You can almost hear the clanging of Hephaestus’ forge in the angles and edges of this wine.
