• Ingredients for Lime Curd:
4 limes
2 eggs
1 egg yolk
1/2 cup sugar (110 g)
1/4 cup butter (50 g)
2 tablespoons cornstarch (15 g)
• For the Cream:
1 3/4 cups cream cheese (425 g)
1/3 cup Greek yogurt (75 g)
1/2 cup whipped cream (100 g)
• For the Base:
1 1/2 cups cookies (200 g)
1/2 cup butter (110 g)
Instructions:
Prepare the Lime Curd:
In a double boiler, melt the butter and combine it with the lime zest and sugar.
Add the eggs and the beaten egg yolk.
Dissolve the cornstarch in the lime juice (filter it first) and add to the mixture, stirring continuously until it thickens.
Line a loaf pan with parchment paper and spread the lime curd on the bottom. Place in the freezer.
• Prepare the Base:
Crush the cookies in a food processor and mix with the melted butter. Set aside.
• Prepare the Cream:
In a bowl, blend the cream cheese and Greek yogurt using an immersion blender.
Fold in the whipped cream.
• Assemble the Cheesecake:
Retrieve the pan from the freezer. Pour the cream mixture over the lime curd, then top with the cookie mixture.
Refrigerate for at least 4-5 hours before removing from the mold and serving.
