Make the filling first (potatoes w/onion or scallions, sauerkraut, etc.) Make the dough - Half bag of white flour, 3 eggs and 2 sticks of butter. Knead and make dough. Roll dough into 2" snakes. Cut approximately 1/2" slices off of the snakes and flatten with a rolling pin flouring making small 5-6" thin dough circles, flour as needed to prevent sticking. Filling goes inside the.circle, fold over and hand pinch. Boil in salted water until they rise to the top, dry them off in on a cookie sheet or pan, flipping them over to expose them to air. Melt butter, dip entire cooled pierogi in butter and stuff into a freezer bag. To prepare, thaw them out and fry them up in a skillet with butter until they show a bit of brown on them... Serve with sour cream... Mmmmm....
