The Shopping list for 40 portions of food (from aldi)
* 500g mince (£1.79)
* 500g pasta (65p)
* Packet of celery (28p)
* 2 x tinned tomatoes (56p)
* 1 broccoli (62p)
* 1 kilo of rice (44p)
* 1 kilo frozen mixed veg (80p)
* 1 tin of baked beans (26p)
* 1 tin of kidney beans (33p)
* 4 large baking potatoes (49p)
* 1 bag of carrots (14p)
* 1 packet of tortillas (40p)
* 1 tin of chickpeas (45p)
* 4 x onions (25p)
* 300g of grated cheese (£1.80)
* 1 packet of bacon (£1.25)
* Various spices (cumin, cajun, curry powder)

Total cost: £10.51, but we only use half of the bacon - (62p worth - perhaps save the rest for a weekend treat, add it to the veggie pie or freeze it - and the spices are worth 11p approximately) which brings us to EXACTLY £10 🥳🥳🥳 FOR 40 PORTIONS OF FOOD!!

1. Bolognese Bake 🍃
INGREDIENTS (from Aldi):
Half a packet of celery 14p
Tin of chopped tomatoes 28p
1 500g packet of Pasta 65p
Half a packet of Mince (250g) 90p
100g of grated cheese 60p
Total cost = £2.57 (makes 8 portions
at 32p per head)

METHOD:
Turn to the oven to 180.
Fry the mince off in a frying pan with a little oil.
Roughly chop the celery and once the mince is browned off, add the celery and fry for a few minutes.
Then add the chopped tomatoes and fill the empty tin with water, adding that too.
Simmer until the sauce has gone thick and then switch off to thicken further.
Add a little of the cheese to the sauce and stir until melted. Season if you wish.
Meanwhile boil the pasta according to packet instructions, drain and set aside.
Combine the pasta and sauce and tip it into a large dish.
Sprinkle over the remaining cheese over the top and bake for 30 minutes at 180.
That’s it!
Serve!

2. Cajun Rice (8 portions)🍚
INGREDIENTS (from aldi):
1 whole head of broccoli 62p
500g rice 22p
4 x bacon rashers 67p
4 x onions 25p
1 tbsp cajun seasoning 4p
Total cost = £1.69 (makes 8 portions
at 21p per portion)

METHOD:
Finely dice the onions and fry them in a little oil until golden.
Chop the broccoli (including stalks) and add them to the frying pan with the onion, fry for 5 minutes.
Roughly chop the bacon and add it to the veg along with the Cajun spices.
Meanwhile, cook the rice according to packet instructions.
Finally, once the rice is cooked - add it to the frying pan and mix thoroughly.
That’s it!
Serve!

3. 🥧 Veggie Pie 🥧
INGREDIENTS:
500g frozen veg - 40p
1 tin of beans - 26p
4 x large baking potatoes - 49p
100g of Cheese - 60p
Total cost = £1.75 (makes 8 portions at 22p per portion)

METHOD:
Turn the oven to 200.
Peel and slice your potatoes into small chunks and boil them in water until soft.
Then drain and mash them with a little butter and seasoning (if you wish).
Pour the frozen veg into a large baking dish.
Spread the beans over the top.
Sprinkle half of the cheese over the top.
Then spoon over the mash and sprinkle the remaining cheese over the top.
Bake for 30 minutes at 200.
After which remove and leave for 5 minutes for the cheese to crisp up.
That’s it!

4. 🍕 Veggie Pizzas (4 portions) 🍕
INGREDIENTS (from aldi):
4 large tortillas - 40p or 8 mini tortillas - 55p
100g of grated cheese - 60p
250g grated carrots - 7p
Total Cost = £1.22 or £1.07 (if using large tortillas as they are cheaper but aldi didn’t have them when I went) making them as little as 26p per portion!

METHOD:
Turn the oven to 180.
Place the tortillas on a lined tray.
Sprinkle over a handful of carrot followed by cheese onto each pizza.
Bake at 180 for 15 minutes.
After which, remove and slice.
That’s it!
Serve!

5. Very Veggie Curry (serves 8) 🍛
INGREDIENTS (from aldi):
Tinned tomatoes - 28p
500g frozen veg - 40p
1 tbsp curry powder - 3p
250g of rice - 11p
Tin of drained chickpeas - 45p
Total cost = £1.27 (15p per person)

METHOD:
Add the veg to a large saucepan with a drizzle oil along with the curry powder (add more spice if you wish).
After a couple of minutes - add the tomatoes then refill the tin with water and add that too.
Finally add the chickpeas and simmer until it thickens. Season if you like.
Whilst the curry is simmering cook the rice according to package instructions.
That’s it!
Serve!

6. 🌶 Chilli Con Carne (4 portions) 🌶
INGREDIENTS (from aldi):
250g of mince 90p
1 tin of chopped tomatoes 28p
1 tin of kidney beans 33p
250g rice 11p
1 tbsp cumin 4p
Total cost = £1.66 (4 portions at 41p per portion)

METHOD:
Add the mince to a frying with a little oil and brown it off.
Then add the cumin and the tomatoes. Refill the tin of tomatoes can with water and add to the pan. Simmer for 10 minutes.
Finally, add the drained kidney beans and cook for a further 5 minutes - season if you wish.
Cook the rice according to packet instructions.
That’s it!
Serve!
