Stuffed eggplants/ my mother's secret recipe.
Ingredients:
2 large eggplants
4-5 tbsp oil
salt
pepper
Minced meat filling:
4 tbsp oil
300gr minced meat
1 onion
1 garlic clove
1 green pointed pepper
1/2 red pointed pepper
2 tomatoes
1 tbsp tomato paste
1 tsp sweet paprika
1 tsp salt
1/2 tsp thyme
Approx. 100ml water
Also:
butter
Grated mozzarella
Preparation:
Cut the eggplants in half and make a few slits. Place in a baking dish. Sprinkle with a little oil, salt and pepper. Bake in a preheated oven at 200° top/bottom heat for approx. 40 minutes until they are nice and soft.
For the filling: add a little oil to the pan. Fry the mince in it. Add the garlic clove and onions and continue to fry. Add the peppers and continue to fry. Add the remaining ingredients and simmer over a medium heat for approx. 10 mins.
Remove the eggplants and immediately mash the inside. Add the butter and mozzarella and mix well. Add a little salt if necessary. Spread the mince filling on top and enjoy.
