Ingredients for Best Combo Naga Pork Curry:
(Tsp- teaspoon; Tbsp- tablespoon; gm- gram; kg- kilogram; ml- millilitre)
Pork with bones, finely cut pieces- 1kg
Salt- 2 tsp
Dried Red Chillies- 6 pieces(large size)
King Chilli- 1 piece
Kidney Beans- 250 gm
Fermented soya bean powder- 1 tbsp
Bamboo Shoot- 50 gm
Garlic- 30 gm
Ginger- 30 gm
Water- 400 ml
Process:
- Soak 250 gm of kidney beans 20-24 hours prior to cooking
- Add 1kg of finely chopped pork into the pan
- Cook in medium flame for 5-10 minutes
- Then add 2 teaspoon of salt and mix well
- Pour in 300 ml of water
- Next add 6 dried red large sized chillies
- Cover the lid and cook in low flame for 10-15 minutes
- Add a king chilli. You can add more if you want it hot and spicy.
- Separate the chillies and grind them to a paste
- Add the paste in the curry and stir well.
- Keep the stove in medium flame
- Add 1 tablespoon of red chilli powder for enhancing the colour of curry
- Cover the lid and cook for 10-15 minutes in low flame
- Next add the soaked kidney beans and give it a good mix.
- Add 1 tablespoon of dried fermented soya bean powder
- Stir the mixture well
- Cover the lid and cook for 15 minutes in low flame
- Now add the shredded bamboo shoots
- Spread them evenly or else it will tangle up
- While the curry is cooking, grind 30 gram of ginger and 30 gram of garlic in a mixer
- Add the ginger-garlic paste in the curry
- Add 80-100 ml water if the curry dries up
- Cover the lid and cook in medium flame for 20 minutes
- Stir occasionally to prevent the bottom of pan from getting burnt
- Cover the lid and heat in low flame for 5 minutes
- The curry is ready
- In the video, the rice is served with green veggies, Colocasia esculenta soup, garlic chives(Allium tuberosum) and our special pork mix curry
- The pork curry takes about 1 hour approx to be cooked properly. You can reduce the time by cooking in high flame. But be careful not to burn the meat while cooking.
