If the current pandemic has taught me something, is its how important it is to A. grow you own food and B. pickle it. So, here is my easy lime/lemon pickle recipe. Its got a real kick (thank you chilli) but feel free to reduce the amount to suit your palate. I leave my lime out in the sun for about 7 days before i open it and enjoy.
Ways to enjoy:
-in a burger
-in a cheese sandwich
-as a side to any curry in a hurry (or stew)
Ingredients:
10 lime/lemons; quartered (If the lemons you use a hard then you'll need to boil them a little to soften them before you cut them)
1 tbsp salt
6 blended chillies (i used 2 habanero and 4 cayenne chillies)
1 tsp turmeric
1 tsp ground chilli
1 cup lemon juice
Good to note: How many lemon you use as well as lemon juice depends on the glass jar you are using. Also, please please use a glass jar and not a plastic one.
