INGREDIENTS
1 onion, diced small
2 large carrots, peeled and diced in 1/2" pieces
2 celery stalks with their leaves, diced in 1/2" pieces
3 garlic cloves
2 teaspoons dry oregano or basil
4 tablespoons extra virgin olive oil
1 teaspoon kosher or sea salt, plus more for finishing
ground black pepper to taste
2 quarts of chicken or vegetable stock (total of 8 cups)
2 cups crushed or pureed Italian tomato sauce
1 large zucchini, diced in 1/2" pieces
1 large summer squash, diced in 1/2" pieces
1 or 2 cups green string beans, trimmed and cut in 1" pieces
1 cup small soup pasta (ditalini or farfalle or shells or orzo)
One 15 ounce can of chickpeas or cannellini beans, drained
1 cup fresh chopped basil
1 teaspoon kosher or sea salt to taste, plus black pepper to taste
