Ingredients for Lamb Stifado
1 kg Diced Lamb cut into chunks
1kg Shalots
4 Tbsp Oil
3 Cloves of Garlic
3 Tbsp Red Wine Vinegar
300ml Red Wine
2 Tins chopped tomatoes
2 Tbsp Tomato Puree
3 Bay Leaves
2/3 Cinnamon Sticks
1 Tsp Sugar
1 Tsp Salt (And then to taste)
1 Tsp Whole Black Peppercorns (Optional)
1 tsp allspice
1/2 Nutmeg
