"Celiac Disease is genetically determined. It's an intolerance to gluten, which is present in most cereals. For celiac patients it is toxic, causing a structural alteration of the mucous membrane in the intestine, and leads to bad absorption (of nutrients). What's most distinctive about this condition is that it can be reversed completely once you eliminate gluten from your diet."
