2 Tbsp Baking Powder
2 Tbsp Baking Soda
2 Tsp Salt
4 3/4 Cups or 875g Brown Sugar
5 Lemons
5 Tbsp or 75ml Ground Ginger
2 Cups or 125g Candied Ginger
2 Cups or 125g Candied Citrus Zests (Orange & Lemon)
For the Christmas Tree Whipping Cream:
6 Cups or 1500g Mascarpone Cream
1 Cup or 20cl Whipping Cream
1 1/2 Cup or 300g Granulated Sugar
3 Tbsp or 45ml Rum
2 Tbsp or 30ml Vanilla Extract
Christmas Simple Syrup
1 Cup Water
1 Cup Granulated Sugar
4 Tbsp or 60ml Rum
