Ingredients: For 4 servings
Rice (basmati): ½ kg
Chicken with bones (big pieces): 750 grams
Onion: 1
Almonds: a handful
Cashews: a handful
Raisins (kishmish): a handful
Oil: 1 ½ tablespoon + 2 tablespoons
Clarified butter (pure ghee): 1 tablespoon
Black cloves: 2
Cardamoms: 2
Cinnamon: 2 small sticks
Ginger garlic paste: 1 tablespoon
Turmeric powder: ½ teaspoon
Red chili powder: 2 teaspoons
Salt: 3 teaspoons
Tomato puree: 1 tea cup
Chopped coriander: a handful
Chopped mint leaves: a handful
Procedure:
1. Roast almonds and cashews and keep aside.
2. Soak rice for about half an hour.
3. Meanwhile in a cooking saucepan, add 1 ½ tablespoon of oil and 1 tablespoon clarified butter or pure ghee.
4. Add sliced onion, black cloves, slit cardamoms and cinnamon sticks.
5. Stir for 15 seconds and add ginger garlic paste and stir for few seconds.
6. Add turmeric powder, red chilli powder and salt.
7. Mix well and add chicken pieces.
8. Stir fry for about 5 minutes.
9. Add chopped mint leaves, chopped coriander and add tomato puree.
10. Stir fry for 30 seconds and add 1 litre of water.
11. (Here we have not added spices. You can add ½ teaspoon of spices or garam masala powder to enhance the taste).
12. Close the lid and cook on low flame for about 20 minutes, till the chicken pieces get tender.
13. After 20 minutes, take out the chicken pieces and keep them aside.
14. Into the same boiling water (in which we have cooked chicken pieces), add soaked and drained rice.
15. Close the lid and cook till the water dries up completely and rice gets tender.
16. Switch off the flame and add raisins or kishmish and keep the lid closed for about 5 minutes.
17. Into a flat bottomed pan, add 2 tablespoons of oil.
18. When the oil is hot, add cooked chicken pieces and close the lid.
19. Semi fry on both sides while keeping the lid closed.
20. Cook till the chicken pieces get very tender and crispy.
21. Garnish the rice with roasted almonds and cashews. Add semi fried chicken pieces.
Chicken Kabsa is ready to be served.
