What is my favourite vegetable? Potatoes!
I love them in every shape, form and cooking method. Fries are always the easiest for me to make but not always the healthiest. These are my baked (roasted or air fried) version of potato wedges. You can sprinkle and coat them in whatever seasoning you'd like- garlic, rosemary, paprika, cheese...
Notes:
- I'm using golden potatoes in the video but you can also opt for russet potatoes. Golden potatoes have more flavour and a creamier interior texture. BUT when baked, the exterior will be less crispy than russet potatoes. It still works but russet potatoes will be just slightly more crispy. Russet potatoes will give you a fluffier and slightly drier interior texture.
- When baking or air-frying the potatoes, remember to keep an eye on them just like anything else you cook. You will want to flip the potatoes around just to make sure all sides are evenly baked.
- Air frying will cook the potatoes faster so I suggest lowering the temperature to 400°F. You can even lower it to 375°F mid way. You will need to occasionally flip the potatoes around in the air fry for an even cook.

8-10 medium size russet or golden potatoes
2 tbsp Vegetable oil
1 tsp salt
1 tsp black pepper
1 tbsp paprika or onion powder
finely chopped cilantro or parsley for garnish
There is no exact measurement for this recipe. Adjust according to your preference.
