Lemon meringue pie is a type of baked pie, usually served for dessert, made with a crust usually made of shortcrust pastry, lemon custard filling and a fluffy meringue topping. Lemon meringue pie is prepared with a bottom pie crust, with the meringue directly on top of the lemon filling.
How to make lemon meringue pie:
Ingredients:
1 Pack Tennis biscuits
125 g Butter
1 Can Condensed milk
3 Eggs
3 Tbsp Sugar
2 Lemons
1 pinch of salt
Step by step:
Preheat Oven @ 175 Degree C (347 Degree F)
Lets start off with crushing our base
Place tennis biscuits into ziplock bag
Crush it till its crumbed
Add condensed milk to an empty bowl
Now lets separate our eggs
Add egg yolk to condensed milk
Keep egg white in seperate bowl
Mix it in and lets add some lemon!
Squeeze all that lemon goodness
Check consistency
Its consistency must be similar to yogurt
If not, add more lemon
Perfect !
Now lets melt our 175g butter
Add melted butter to crust base
Mix them together
Lets start shaping our crust
Make it even throughout
Add condensed milk/egg yolk/lemon filling
Spread it evenly
Now lets make our meringue topping
Medium on electric beater, add a pinch of salt
Once fluffed add 1 tsp of sugar
Slowly add rest of sugar
Whisk until the egg white is peaking
Perfect !
Now lets add it to the top
Mmmm.. thats looking good
Spread it to cover top of the pie
Now its ready for baking !
Bake @ 175 'C (that's 347 F) for 15 min
Yummm.. Wait 10 min until serving
