This video follows the profiling and heat treating of an 8” chef’s knife. The blade is made from 50100 high carbon steel. The knife was rough cut with an angle grinder, and the shape then refined with a 2”x72” belt grinder. Clay was applied to the spine of the knife before heat treating to prevent the spine from hardening. The blade was quenched in Parks 50 fast quench oil, and tempered at 400F for two 2-hour cycles. After the blade is sanded to the final finish it will be acid etched in ferric chloride to display a hamon, a visible line between the hardened cutting edge and the softer spine.
