What you’ll need for 2 pers:
2 lamb shanks
1 head of garlic
a sprig of rosemary
a sprig of thyme
2 tbsp. of honey
olive oil
salt and pepper
a cast-iron saucepan
Steps:
- Pour a small amount of olive oil into the cast-iron casserole and quickly sear the lamb shanks on high heat on all sides, season with salt and pepper
- Thin out the rosemary and thyme, grind them with a mortar then add the honey and stir
- Coat the lamb shanks with the herb and honey mixture and brown again on all sides
- Add the unpeeled garlic cloves and half a glass of water
- Close the casserole and place in the oven at 150°c over static heat for 2h30
- Take the casserole out and turn the lamb shank every 30 minutes.
