Mutton Raan Roast is an incredibly delicious Bakra Eid Recipe.
Ingredients:
-Mutton leg 2.5kg
-Yogurt 1 cup
-Sambal oelek or red chilli paste 3 tbsp
-Green chili crushed 1 tbsp
-Red chili 2 tsp
-Black pepper powder 2 - 2 & 1/2 tsp
-Roasted zeera powder 1 tbsp
-Oil 6-8 tbsp
-Raw papaya/ Meat tenderizer 2 & ½ tbsp
-Vinegar 3-4 tbsp
-Food color ½ tsp
-Salt to taste
-Oil for shallow frying 1 cup
Directions for Preparation:
1. Take one mutton leg and place deep cuts on it.
2. In a bowl add yogurt, oil, salt, black pepper, green chili paste, cumin powder, meat tenderizer, vinegar, sambal oelek, red chili powder, food color and mix well.
3. Pour the marination mixture over the leg with deep cuts and marinate it for 8 hours or overnight.
4. Heat oil in a large wok/pot and put marinated mutton leg along with marination mixture, cover it with lid and let it cook for at least 2 hours on low flame (an hour form each side) until meat is tender. Fry it in the same oil on medium high flame for at least 5 min from each side for golden brown color.
Serve roasted ran with veggies, lemon, chat masala & enjoy!
