I brined these large Sturgeon fillets for 2 days I usually only brine salmon or other fish 24 hours! It was Fantastic! Here is the recipe!
Brine
2 Quarts water
2 cups brown sugar
1 cup Kosher salt
½ cup soy sauce
½ cup lemon juice
1 Tablespoon each of garlic powder. Onion powder, black pepper
Brine fish in the solution for 24 hours in the refrigerator!
