Black Eyed Beans Fritters is one of the popular snacks served in most of the West African Countries. Black Eyed Beans Fritters is known as " Koose" in Ghana and Akara or Akala in Nigeria. These Fritters can either be enjoyed as a snack or pair with porridge, hot or warm beverage of your choice.
The Black Eyed Beans goes through 24hr soaking process; to extract the gas out from the beans, so one does not get blotted belly after eating.
Reseach shows that, Black Eyed Beans contains Flavonoids which helps the body fights diseases and it also provides Protein, Fibre, iron and antioxidants that makes it healthy in addition to diet.

- 500g of Black Eyed Beans (soaked for 24hrs and rinsed)
- 3 British Shallot onions ( you can use any onions of your brand and preference)
- 1 large red onion
- one large white onion
- 2 large Bell peppers (optional)
- 10g of Dill herbs (optional)
- Salt to taste
- Sunflower oil for deep frying ( you can use oil of preference
