This is a Vegetarian Thai red curry noodle soup that can also be easily made Vegan by just taking out the soft boiled eggs. It's deliciously fragrant, fresh and vibrant noodle soup packed with punch and flavour, perfect for a light summer evening supper.
At the time of posting we are currently still in lock down and I've been day dreaming of sitting by the beach in the evening enjoying a delicious bowl of curry noodle soup. Since I'm not able to be there right now, I thought I would stimulate our senses by adding ocean waves and Thai acoustic guitar music. Cook this up in the evening with your garden door open and you'll certainly feel like you're in Thailand! Hope you enjoy!

► INGREDIENTS:
RED CURRY SOUP
1 Stalk Lemongrass
1 tsp Coriander seeds, toasted
6 cloves Garlic
2 tbsp Kaffir lime leaves, dried
3 tsp Sea salt
1 can Coconut milk (400ml)
1 tbsp Ginger, julienne
4 bulbs Shallots, thinly sliced rings
3 tbsp Red curry paste
1 whole Red bell pepper, diced
1 tsp Curry powder
1 tsp Turmeric
3 tsp Brown sugar
3 tsp Soy sauce
2 tsp Golden Mountain Seasoning
1 cup Water
1 small Lime
GARNISHES
1 small Egg, soft boiled, sliced in half
1/2 cup Beansprouts
4 tbsp Coriander, finely chopped
1/4 cup Red onion, thinly sliced
1/8 cup Tofu, fried in soy sauce
1/2 tbsp Crispy shallots
1 small Lime, cut into wedges
