1 large (1.3kg) Fish (Sea Bass/Grouper/Snapper)
20g Ginger (sliced)
2 tbsp Cooking oil
½ tsp Salt
½ tsp White pepper
1 tsp Cornstarch
1 Egg white
2 tbsp Cooking oil
400g Suan Cai (Pickled Mustard Greens)
6 stalks Spring onions (chop and separate white and greens)
10g Ginger (minced)
4 cloves Garlic (minced)
1 tbsp Sichuan peppercorns
1 tbsp Prickly ash
2 tbsp Pickled green chillies
1 liter Water
2 tbsp Hua tiao chiew
1 tsp Fish sauce
Garnish:
4 tbsp Peanut oil
Spring onions (green)
3 cloves Garlic
1 tbsp Sichuan peppercorns
2 Dried chillies (deseeded and sliced)
