Vietnamese Pork & Shrimp Spring Rolls with Easy Homemade Peanut Sauce Recipe | (Goi Cuon)
Recipe
1 lb shrimp
1 lb pork
16 oz vermicelli noodles (fine or medium size)
1 pack of rice paper
Lettuce (You can add any vegetables or herbs that you like)
Garnish with mint leaves
Peanut Sauce:
2 tbsp cooking oil (preferably a neutral oil)
1 tbsp of mince garlic
5 tbsp hoisin sauce
3 tbsp creamy peanut butter
1/2 cup of water
1 tsp chili garlic sauce (optional)
Garnish with roasted peanut
Direction:
Step 1
Boil the shrimp for 1-2 minutes on medium-high heat or until it’s no longer translucent. Then slice it in half.
Step 2
Boil the 1 lb of pork on medium heat for 15-25 minutes or until fully cooked. Then thinly slice pork.
Step 3
Follow the package cooking instructions for the vermicelli noodles. The cooking time will vary depending on the brand and size of the noodles.
Step 4
Dip the rice wrapper into a bowl of warm water. Then you are ready to assemble your spring roll with the prepared shrimp, pork, noodles and greens of your choice.
Making the Peanut Sauce:
Step 1
Add the minced garlic into a sauce pan and cook for 1-2 minutes on low heat.
Step 2
Add the hoisin sauce, peanut butter, and water
Step 3
Bring to a boil then quickly turn off the heat
Step 4
Add 1 tsp garlic chili sauce (optional)
Step 5
The sauce will thicken up once it cools down.
