Sweet roast strawberries, whipped salty feta, a touch of fresh basil. Mix them together and the result is a flavour explosion. Perfect for date night at home, a girls night in with a glass of bubbles or something a little bit decadent for when guest come over.
Here we have two recipes in one.
Served Balsamic Roast Strawberries over ice-cream or with a cheese platter.
How about this Whipped Feta drizzled over a salad or as a spread for your next eggs on toast.
WHIPPED FETA DIP
200 g feta
200 g Greek yogurt
2 tbsp. olive oil
zest from 1/2 lemon
a little cracked pepper, to taste
Place all ingredients into a blender.
Pulse a few times then mix until smooth, scraping down the sides once or twice, as needed.
Refrigerate at least 1 hour. Can be made up to 3 days in advance.
ROAST BALSAMIC STRAWBERRIES
500 g strawberries
1 tbsp. balsamic reduction
1 - 2 tsp honey
Remove tops of strawberries and cut each strawberry into 2 or 3 pieces.
Place onto a lined baking sheet and drizzle with balsamic reduction and honey.
Mix to combine and place into a preheated oven 180 C/ 350 F for 15-20 minutes, until soft.
Allow to cool for a few minutes before serving, or allow to cool completely and serve with cheese or ice-cream.
Store in an airtight container in the refrigerator for up to 5 days.
