Black Spanish Seafood Paella with Squid ink

Please see below my step by step method and list of ingredients.

INGREDIENTS
• 100g Squid tubes cut into circles
• pinch salt
• Pinch of ground black pepper
• 3 to 4 TBSP of Olive Oil
• 1/2 Red Onion
• 2-3 Garlic cloves
• 1/2 Tsp of Smoked paprika
• 2 grated tomatoes or half a can of chopped tomatoes
• 1 ½ tsp of Squid ink/Cuttle fish ink
• 200g of Paella Rice or short grain rice (not long grain or basmati)
• 600ml of fish stock
• Pinch of saffron around half tsp
• 150G of Prawns with or without shell
• 1 lemon
• Chopped parsley
METHOD –
1. Cut your Onion into small squares, get your Garlic cloves and cut them into small squares.

2. Get your squid tubes and cut them into rings. (As per video)

3. Get two tomatoes and grate them into a bowl or get half a can of chopped tomatoes.

4. Make sure everything is placed into individual piles, so it is ready to cook.

5. Get your Paella pan or equivalent and get it heating to a medium heat, once its reaches temperature add the olive oil.

6. Add the Squid and cook for 1 minute and season with salt and pepper, then remove and place the squid on to a plate.
7. Now go ahead and add the onions and cook the onions for around 2-3 minutes before adding the Garlic, Add the Garlic and stir everything together and cook for a further 2-3 minutes.

8. Now add the paprika and make sure you coat all the onions and garlic with it.

9. After 20-30 seconds add the Grated tomatoes and stir well cook this for 3 minutes mixing everything.

10. Now you are ready to add the Squid ink, make sure you carry on stirring everything together

11. After 1 minute add the Paella rice and stir well,

12. Then add the bay leave along with the fish stock.

13. Once you have added the fish stock, stir once then after this do not stir and increase the heat slightly

14. Now add the pinch of saffron and then Squid rings and cook for 5- 6 minutes

15. At this stage add the raw prawns and cook for 8 minutes.

16. Now increase the heat for 2 minutes so you can create the socarrat ( the delicious crispy bit at the bottom)
17. At this stage get some foil and cover the paella and leave the dish to rest for 5 minutes before serving.
18. Once the foil has come off place your lemons and sprinkle your parsley and enjoy

The reason I choose this dish as my first video is because it was inspired by the recent tragedy of George Floyd may he rest in peace. In a world where so much awful stuff is happening there is always food to bring us together! As someone who has been a victim of racial abuse In the past, this movement is very close to my heart.
