Fluffy Rice with Tahdig درست کردن پلو با ته دیگ
Persian steamed rice, also known as Chelow (pronounced cheh-low), is a staple dish in Iranian cuisine. It's known for its fluffy texture, separate grains, and a subtle flavor that complements other dishes beautifully.
Iranian steamed rice is a fragrant fluffy rice and is typically served with grilled meats, stews (khoresh) and vegetables.
A touch of saffron liquid adds a delicate floral aroma and a beautiful golden hue (though not always used).
In Persian cooking method, rice gets steamed with the most scrumptious , crunch and golden crust that is called tah-dig meaning bottom of the pot.

Ingredient:
4 cups Persian dry rice or Basmati rice
12 cups of water for parboiling rice
1/3 cup vegetable oil
1tbsp Saffron water
1tbsp Salt
Butter
For tahdig
One tortilla or Lavash bread
one potato, peeled and sliced
