What's wrong with regular kimchi? Well nothing is wrong with regular kimchi. We made this vegan kimchi recipe awhile back, when we sold it in our catering business, for people who were allergic to seafood and vegetarians. This way everyone gets some kimchi love, and plus sometimes its hard or expensive to get ingredients, like the salted fermented shrimps. So we have a special ingredient to replace that, and it is mushrooms, well mushroom powder to be exact.
