Wash oxtails 2 to 3 times in water and vinegar.
Seasoning: garlic powder and onion powder, paprika, Adobe,Saxon,accent,oxtail seasoning then chop up 5 scallions and add thyme and scotch bonnet pepper (I used 2 cause I had a large amount of oxtails) you put as many as you choose for you hotness.
After oxtail are tender add butter beans
And boil rice for a bed of rice under your oxtails and butter beans.
Cabbage I shredded mine real fine. And add a bell pepper cut I. Thin slices
Take smoke me or salt pork or turkey meat boil in water till tender. Put meat only in a little cooking oil and add cabbage and bell pepper. Cook low and the steam will cook cabbage with no water.
