It's time for a new episode of Cook it Like a German! Once again, our food expert Felicitas Then is in the kitchen whipping up a typical German dish.

As with every episode, a guest who doesn't come from Germany will be looking over her shoulder and trying their hand at the classic alongside Felicitas – who is quite rightly our resident master of cuisine! On the menu: Käsespätzle, the German take on mac ‘n cheese. Felicitas is joined this time by renowned Russian chef Stalic Khankishiev.

RECIPE German Cheese Spaetzle

Ingredients for 4 - 6 people:

500g wheat flour, plus one tbsp for the unions
5 eggs
Warm water as needed (approx. 100 - 150 ml)
Salt
1 pinch of nutmeg
2 Spanish onions
300g strong mountain cheese / "Bergkäse"
300g emmental cheese
50g butter, plus a little extra for the tray
Freshly ground black pepper
1 handful of flat leaf parsley


Preparation:

1. Put the flour in a bowl and then add the eggs. Then slowly add water until the mix is thick and smooth. Then season with salt and nutmeg. Then beat it with a kitchen spoon before letting is settle for 15 minutes.

2. During this time, prepare the cheese mixture. Remove any rind attached to the cheese and grate it.

3. Cut the onion into rings and heat the butter in a pan. Then put the onion rings in the pan and wait until they are brown. Then season with salt and pepper.

4. Bring a good amount of water to the boil in a saucepan and add salt. Then, sliding the dough through a spaetzle press, put it carefully into the boiling water. Allow the spaetzle to rise and float on the surface for 2 -3 minutes, after which time they will be cooked. With a wooden kitchen board and a dough scraper, you can also scrape spätzle directly into the pot.

5. Preheat your oven to 160 degrees Celsius. Use a ladle to remove the paste from the boiling water and place it immediately into a buttered baking tray or a cast iron pan. Then, sprinkle the grated cheese on top.

6. Finally, put the golden brown onions over the spaetzle and leave everything to melt together in the oven for about 15 minutes.
