- bring a medium pot with carrot pieces and enough water to cover to a boil
- reduce to a simmer and cook until fork-tender, 15 -18 minutes

- quality cooking oil (1 - 2 tablespoons)
- smoked paprika
- dried thyme

- Peel, trim and cut carrots into 1/2 pieces
- mince a clove of garlic
- mix carrots and all ingredients
- spread evenly on a cookie sheet
- cook for 15-20 minutes on 450 degrees
