Serves- 2-3
Ingredients-
1 tbsp refined oil
1 tbsp butter
1/2 cup chopped onions
2 tbsp garlic, chopped
2 tbsp ginger, chopped
1 cup tomatoes, chopped
1/2 tsp turmeric powder
1/2 tsp red chilli powder
1/2 tsp garam masala
1/2 tsp coriander powder
2 boiled eggs
1 egg- for scrambled
2 eggs- for sunny side up
Salt- to taste
Fresh coriander leaves, chopped – for garnish
Green chillies, chopped- for garnish
Method-
Heat oil and butter in a pan. Once hot, add chopped onions.
Sauté onions till oil leaves the sides.
Add chopped garlic, ginger and mix well.
Add tomatoes to this. Lightly sauté and then add turmeric powder, red chilli powder, garam masala and coriander powder.
Once tomatoes soften, add the boiled eggs and mix them well.
Break 1 egg and scramble in the mixture.
Break 2 eggs and make sunny side up .
Garnuish with fresh coriander and chopped green chillies.
Serve hot with pav, bread or roti.
