In today's video I walk you through how I prep beef short ribs for the smoker. Short plate ribs/short ribs/dino ribs, whatever you call them, are the best kind of beef rib you can get in my opinion. They're like brisket with a handle and when smoked right, are as tender and delicious as brisket!
A couple of notes that I wish I had been able to tell you during the video. When I first set out to make these, I had planned on wrapping them just like I would a brisket. It's a bit hard to see in the video but I do have my MEATER+ wireless thermometer (a must have in my opinion, link below if you're interested) inserted into the thickest part of the rib and was planning to wrap once the ribs hit 165F internal temperature or when the bark was set to my liking (these 2 don't always align). I ultimately changed my mind and decided to just spritz once the bark was set and let them smoke unwrapped - I regret nothing! If you're short on time, wrapping will definitely speed them up but, ultimately you're looking for tenderness and not an internal temperature. The buttery soft point will vary depending on the thickness, cut, smoking temperature and so on... you can use internal temperature as a guideline for when your ribs will be done (between 195 - 203F for low n slow) but always go by tenderness. Okay, now that I've told you that I feel much better!
