This dessert is very refreshing and simple. It’s good to serve warm or cold 😋
INGREDIENTS
* 680g-700g Papaya (half of papaya)
* 40g Peach Gum
* 40g Dried Longan
* 12 Dried Red Dates (approx. 60g)
* 20g Dried Goji Berries or Wolfberries
* 6 Pandan Leaves
* 120g Rock Sugar
* 9 cups (2¼ liters) Water
PREPARATION
1. Rinse, soak Peach Gum with 2 cups cold water for at least 8 hours or overnight until it’s softened and expanded. Once the peach gum is rehydrated, it should be approx. 325g and more. Remove the black impurities and rinse several times.
2. Soak both dried red dates and longan for 30 minutes with cold water
3. Rinse 20g dried goji berries/wolfberries
4. 680g-700g papaya (half of papaya),
that is ripe and firm, also remove skin and seeds. Cut it into small chunks or any size you prefer
INSTRUCTIONS
1. Pour 9 cups water into the pot, leave water to boil.
2. Once the water boils, add 6 pandan leaves, dried red dates, dried longan and cover with the lid. Simmer on medium low heat for 20 minutes.
3. After 20 minutes, add in the papaya, rock sugar and peach gum, and continue to simmer for another 15 minutes.
4. Lastly, add goji berries/wolfberries and simmer for 3 minutes.
5. Turn off the heat, let it cool. It’s ready to serve, enjoy!
