► Chewy Brown Butter Chocolate Chip Cookies

Ingredients:
¾ cup unsalted butter
2 large eggs
¾ cup granulated white sugar
¾ cup dark brown sugar
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon salt
½ teaspoon baking soda
2 cups semi-sweet chocolate chips (reserve ½ cup as toppings)

Directions:
Heat pan on medium. Add unsalted butter and melt, stirring to help evenly distribute the heat. Once melted, allow butter to foam and sizzle. After some time, you will notice the sizzling will subside. At this point, stir the butter and check the level of browning of the milk solids at the bottom of the pan. Continue cooking until the butter has turned golden brown to dark golden brown, depending on your preference. The butter should smell nutty. The whole process should take about 2-3 minutes. Transfer the brown butter into a small bowl. Let it cool.
In a large bowl, add eggs, granulated white sugar and dark brown sugar. Beat until fluffy. Add brown butter and beat until well incorporated. Add vanilla extract and mix. Sift all-purpose flour, salt, and baking soda into the wet mixture. Mix well. Fold in 1 ½ cups of semi-sweet chocolate chips. Cover the bowl with plastic wrap and refrigerate the cookie dough for 1 hour.
Preheat the oven to 375F. Prepare 2 standard size baking sheets lined with parchment paper.
Remove the cookie dough from the refrigerator. Using a ⅛ cup scoop (or form cookie dough into golf ball size balls), scoop cookie dough into the lined baking sheet, placing them 2-3 inches apart. Each standard baking sheet should contain about 8 scoops of cookie dough. Add more semi-sweet chocolate chips as topping. Bake for 12 minutes. Cool in a rack. Store in an airtight container.

► Tips

Use a light colored pan to make brown butter so you can see the color of the butter changing.

You may reduce the amount of semi-sweet chocolate chips.

Use a small piece of cookie dough to keep the parchment paper lining the baking sheet in place.
