Punjabi Lobia Recipe | Rongi Recipe | Black Eyed Beans Masala

Ingredients
250 grams rongi/lobia/black-eyed beans, soaked in water overnight and the water removed the next morning
2 tbsp oil
1/2 tsp red chilli powder
1 tsp salt/to taste
2 tomatoes & 1-inch ginger, pureed
2 onions & 1 tbsp garlic paste, pureed
1/2 tsp kasuri methi/dry fenugreek leaves
1/2 tsp haldi/turmeric powder
1/2 tsp garam masala
1/2 tsp coriander powder
1 liter of water
Method
1. Heat oil in a pressure cooker and add in the onion puree and kasuri methi. Saute until it turns light brown and the water almost dries up.
2. Put in the tomato puree as well as the coriander powder, red chilli powder, turmeric powder, garam masala, and salt. Mix well.
3. Put in the soaked rongi and mix well. Saute for 10-12 minutes until the water dries out and the masala is almost dry.
4. Put in the water and close the cooker. Keep the heat on high and at the first whistle reduce heat to low and cook for 15 minutes then put off the heat and let the pressure subside.
5. Open the pressure cooker and check the lobia. It should be well cooked. Heat the lobia masala until it is hot and cook for some more time if you want a thicker gravy.
6. Serve with roti or rice.
